Rubin is another indigenous Bulgarian grape variety created in 1947 whose importance and supreme quality has become known in the last decade. It is created through the crossing of Nebbiolo and Syrah and makes wines with unique memorable style. Only the best grapes from the vintage are handpicked in small crates before the wine is fermented and aged in new French oak barrels for 12 months. As with all Nobile red wines it spends further 6 months in bottle before release.
Full bodied with very juicy palate and long complex finish it is perfect served at 16-18C alongside red meat, hard cheeses and game dishes.
